Sausage & Rice Casserole

Ingredients

  • Servings: 6
  • 1 lb lamb sausage
  • 1 cup sliced celery
  • 1/2 cup chopped onion
  • 1/4 cup chopped sweet red pepper
  • 1/4 cup chopped green pepper
  • 1/2 cup sliced fresh mushrooms
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 1 cup uncooked converted rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 preheat oven to 350 degrees,.
  • 2 brown sausage in a heavy skillet over medium heat, transfer sausage to a 2 1/2 quart greased casserole dish.
  • 3 in the sausage drippings, saute celery, onion, sweet red pepper, green pepper and mushrooms until lightly browned, turn into casserole.
  • 4 add water chestnuts, rice, broth, salt and pepper to casserole, mix well.
  • 5 cover and bake at 350 degrees for 1 to 1 1/2 hours or until rice is fluffy and tender.
