Sausage & Rice Casserole

Ingredients

- 1 lb lamb sausage
- 1 cup sliced celery
- 1/2 cup chopped onion
- 1/4 cup chopped sweet red pepper
- 1/4 cup chopped green pepper
- 1/2 cup sliced fresh mushrooms
- 1 (8 ounce) can sliced water chestnuts, drained
- 1 cup uncooked converted rice
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 preheat oven to 350 degrees,.
- 2 brown sausage in a heavy skillet over medium heat, transfer sausage to a 2 1/2 quart greased casserole dish.
- 3 in the sausage drippings, saute celery, onion, sweet red pepper, green pepper and mushrooms until lightly browned, turn into casserole.
- 4 add water chestnuts, rice, broth, salt and pepper to casserole, mix well.
- 5 cover and bake at 350 degrees for 1 to 1 1/2 hours or until rice is fluffy and tender.
