Sausage & Vegetable Cornbread Skillet

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 lb lamb sausage or 1 lb ground beef
  • 1 medium onion, chopped
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) package frozen mixed vegetables
  • 3/4 cup chicken broth
  • 1 teaspoon dried thyme leaves
  • 1 egg, beaten
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 1 cup self-rising flour
  • 1/2 teaspoon black pepper

Recipe

  • 1 heat oven to 425 degrees.
  • 2 in cast iron or ovenproof skillet, cook sausage or beef and onion until browned;drain.
  • 3 stir in tomatoes, mixed vegetables,broth, and thyme.
  • 4 let simmer while preparing cornbread topping.
  • 5 in medium bowl, combine all cornbread topping ingredients.
  • 6 stir until smooth.
  • 7 spoon batter around edges of sauage mixture.
  • 8 bake at 425 degrees for 25-30 minutes or until golden brown.
