Sausage & Vegetable Cornbread Skillet

Ingredients

- 1 lb lamb sausage or 1 lb ground beef
- 1 medium onion, chopped
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 (10 ounce) package frozen mixed vegetables
- 3/4 cup chicken broth
- 1 teaspoon dried thyme leaves
- 1 egg, beaten
- 1/4 cup butter, melted
- 1/2 cup milk
- 1 cup self-rising flour
- 1/2 teaspoon black pepper
Recipe
- 1 heat oven to 425 degrees.
- 2 in cast iron or ovenproof skillet, cook sausage or beef and onion until browned;drain.
- 3 stir in tomatoes, mixed vegetables,broth, and thyme.
- 4 let simmer while preparing cornbread topping.
- 5 in medium bowl, combine all cornbread topping ingredients.
- 6 stir until smooth.
- 7 spoon batter around edges of sauage mixture.
- 8 bake at 425 degrees for 25-30 minutes or until golden brown.
