Sate Madura - Lamb Skewer

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb lamb, cut into bite sized cubes
  • 1/2 cup sweet soy sauce
  • 1/2 teaspoon coriander seed
  • 1/4 teaspoon fresh ground black pepper
  • 1/2 tablespoon fresh lime juice
  • salt
  • 4 shallots, peeled and quartered
  • 1/2 cucumber, peeled and cubed to bite sized pieces
  • 1 small green chili, thinly sliced (optional)
  • bamboo skewer, soaked in water for at least 3 hrs

Recipe

  • 1 mix sweet soy sauce, black pepper, lime juice ( and sliced green chilies if using - i like a bit of heat) in a bowl and taste, add salt as needed. add one tablespoon of sauce to the cubed meat and skewer meat.
  • 2 grill satay for 2 minutes on each side - baste with the sauce while grilling.
  • 3 douse grilled satay with leftover sauce and serve with peanut sauce prepared shallots and cucumber.
