Smothered Lamb Chops And Rice

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 lamb loin chops, bone-in or 4 boneless lamb loin chops, 1/2 inch thick
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 teaspoon minced parsley
  • 3 cups cooked rice

Recipe

  • 1 brown lamb chops in non-stick frying pan over medium heat until browned on both sides.
  • 2 remove from pan, reserving brown bits and pan juices.
  • 3 add cream of mushroom soup, stirring to blend.
  • 4 add small amount of water to can to rinse and add to pan.
  • 5 add minced parsley.
  • 6 when heated through, return lamb chops to pan and cook on low-medium low until done, about 30 minutes.
  • 7 serve with cooked rice and smother chops and rice with mushroom gravy.
