Lamb And Red-pepper Skewers With Mango Dipping Sauce

Ingredients

  • 1 cup coarsely chopped mango
  • 2 tablespoons pineapple juice
  • 2 teaspoons lime juice
  • 1 1/4 teaspoons kosher salt
  • 2 tablespoons chopped red onions
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon chopped green jalapeno
  • 1 lb boneless lamb loin, trimmed and cut into 3/4 inch cubes
  • 1 large red bell pepper, cut into 3/4 inch squares
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 2 teaspoons onion powder
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 36 bamboo skewers, 5 inches

Recipe

  • 1 preheat oven to 450°f.
  • 2 place mango, pineapple juice, lime juice, and 1/4 tsp of salt in a blender and process until well blended but not smooth. pour into a bowl and stir in onion, cilantro, and jalapeno. refrigerate until chilled.
  • 3 toss the lamb, bell pepper, and oil in medium bowl.
  • 4 mix paprika, onion powder, cinnamon, allspice and remaining 1 tsp salt together in small bowl. add to lamb and toss to coat.
  • 5 slide 1 piece of red pepper, skin side first, onto each skewer followed by 1 piece of lamb. place skewers on a foil-lined baking sheet.
  • 6 bake skewers until meat is barely cooked in the center, 10-15 minutes.
  • 7 serve with mango sauce.
