Lamb And Sweet Potato Stew

Ingredients

- 1 1/2 lbs lamb loin rib end roast, cut into 2-inch pieces
- 1/4 cup flour
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon salt
- 3 tablespoons olive oil
- 2 medium onions, chopped
- 14 1/2 ounces chicken broth
- 2 medium sweet potatoes, peeled and cut into 1 1/2-inch pieces
- 1 cup frozen peas
- 3 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
Recipe
- 1 toss meat with flour, 2 tsp cumin, 1 tsp chili powder and salt until well coated.
- 2 in large pot, heat 2 tbs oil over medium-high heat. add meat. cook, stirring occasionally until well browned (5 minutes). add remaining 1 tbs oil and onions, cooking until tender (3 minutes).
- 3 add broth, scraping up browned bits on bottom of pot. bring to boil. cover. reduce heat to medium-low and simmer 1 hour.
- 4 stir in sweet potatoes, remaining 1/2 tsp cumin and 1/2 tsp chili powder. cover and simmer until meat and potatoes are very tender (45-60 mins).
- 5 uncover. stir in peas. simmer, stirring occasionally until sauce is thickened (10-15 mins).
- 6 remove from heat, stir in cilantro and lime juice.
