Lamb Tenderloin With Orange Sauce

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon allspice
  • 1 lb lamb tenderloin, sliced into 12 rounds and slightly flattened
  • 2 tablespoons cooking oil
  • 1/4 cup chicken stock
  • 1/2 cup sour cream
  • 2 tablespoons orange juice
  • 1 tablespoon orange rind, grated
  • 1/4 teaspoon salt
  • 1/2 teaspoon worcestershire sauce
  • 1 tablespoon orange liqueur

Recipe

  • 1 combine flour, salt, pepper, paprika and allspice.
  • 2 coat rounds of tenderloin.
  • 3 heat oil in a heavy skillet and brown lamb well.
  • 4 add stock, cover and simmer for 30 minutes.
  • 5 combine remaining ingredients in a small pan.
  • 6 heat, but do not boil.
  • 7 serve drained lamb over , or, better yet, wild rice.
  • 8 pour sauce over all and serve.
  • 9 garnish with parsley and orange slices.
