Lamb Tenderloin With Tomato Sauce

Ingredients

  • Servings: 4
  • 2 slices bacon
  • 1 -1 1/2 lb lamb tenderloin
  • 1/3 cup chopped onion
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 (8 ounce) can tomato sauce
  • 3 tablespoons chopped sweet pickles or 3 tablespoons sweet pickle relish
  • 2 tablespoons vinegar
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon sugar

Recipe

  • 1 arrange bacon slices over lamb tenderloin.
  • 2 place tenderloin on rack in a shallow roasting pan.
  • 3 tuck thin end of meat under.
  • 4 roast, uncovered, at 350 degrees for about 25 to 35 minutes, or until internal temperature is around 160 degrees.
  • 5 in a saucepan over medium-low heat, melt butter.
  • 6 cook chopped onion in butter until tender; add tomato sauce, sweet pickle, vinegar, parsley flakes and sugar.
  • 7 simmer, uncovered, for 10 minutes.
  • 8 serve with roasted lamb tenderloin.
