Lamb Tenderloin With Vidalia Shiitake Ginger Apple Cider Chutney

Ingredients

  • Servings: 4
  • 1 tablespoon unsalted butter
  • 1/4 cup chopped vidalia onion
  • 1/2 cup chopped shiitake mushroom
  • 1 1/2 teaspoons fresh finely chopped ginger
  • 1/4 cup apple cider vinegar
  • fresh ground pepper
  • kosher salt
  • 2 dashes garlic powder
  • 2 tablespoons water
  • 1 1/2 tablespoons fresh orange juice

Recipe

  • 1 cook lamb tenderloin as indicated on package make chutney near the end of tenderloin cooking b/c you will need tenderloin drippings.
  • 2 sauté onions & mushrooms in the butter in a small sauce pan over medium heat for approximately 5-8 minutes or until onions turn clear.
  • 3 add vinegar & ginger to sauce pan & turn heat up to medium high – reduce to half.
  • 4 add garlic, salt, pepper, orange juice, water & lamb drippings – reduce to half again.
  • 5 slice lamb tenderloin into medallions & cover with chutney sauce.
