Lamb Loins In Tarragon Sauce

Ingredients

  • Servings: 4
  • 1 lb lamb loin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon brown mustard
  • 1 tablespoon butter
  • 1/2 teaspoon tarragon
  • 1/3 cup beef broth
  • 1/2 cup whipping cream

Recipe

  • 1 cut lamb into serving size pieces.
  • 2 sprinkle with salt and pepper, rub with mustard.
  • 3 melt butter, and fry lamb chops. remove when dome.
  • 4 stir beef broth and tarragon into the skillet.
  • 5 add whipping cream, and salt and pepper to taste. return lamb chops and simmer until cooked through.
