Lamb Medallions With Cider Sauce

Ingredients
- Servings: 4
- 1 1/2 lbs lamb tenderloin, cut into 2 inch medallions (should make about 8)
- 1 tablespoon oil
- 1 cup apple cider
- 1 tablespoon apple cider vinegar
- 1/2 cup dry wine
- salt and pepper, to season
Recipe
- 1 heat large skillet over med-high heat and add oil.
- 2 season lamb with salt and pepper lightly on each side.
- 3 sear lamb about 5 minutes on each side or until brown.
- 4 add cider, vinegar and wine and bring to a boil.
- 5 cover and cook 5 more minutes.
- 6 remove lid and reduce heat to med., simmer 5 more minutes.
- 7 remove lamb to a plate and keep warm.
- 8 simmer liquids until reduced to 1/2 cup.
- 9 spoon sauce over lamb and enjoy!
