Lamb Medallions With Cider Sauce

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs lamb tenderloin, cut into 2 inch medallions (should make about 8)
  • 1 tablespoon oil
  • 1 cup apple cider
  • 1 tablespoon apple cider vinegar
  • 1/2 cup dry wine
  • salt and pepper, to season

Recipe

  • 1 heat large skillet over med-high heat and add oil.
  • 2 season lamb with salt and pepper lightly on each side.
  • 3 sear lamb about 5 minutes on each side or until brown.
  • 4 add cider, vinegar and wine and bring to a boil.
  • 5 cover and cook 5 more minutes.
  • 6 remove lid and reduce heat to med., simmer 5 more minutes.
  • 7 remove lamb to a plate and keep warm.
  • 8 simmer liquids until reduced to 1/2 cup.
  • 9 spoon sauce over lamb and enjoy!
