Lamb Piccata

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb lamb loin (in 8 slices)
  • 2 tablespoons flour
  • 1 tablespoon oil
  • 1 teaspoon cornstarch
  • 1/2 cup chicken broth
  • 3 tablespoons lemon juice
  • 3 tablespoons chopped parsley
  • 1/2 teaspoon salt

Recipe

  • 1 dredge lamb in flour. heat oil in a large nonstick skillet.
  • 2 add lamb and cook until browned on both sides. remove.
  • 3 stir together the cornstarch, chicken broth, lemon juice, and parsley. simmer 1 minute. spoon over lamb.
