Lamb Ragu

Ingredients

- 281 g lamb loin, cubed. remove as much fat as possible
- 1 small red onion, chopped
- 1 medium carrot, chopped
- 1 stalk celery, chopped
- 290 g chopped canned tomatoes

- 1/2 teaspoon hot italian seasoning
Recipe
- 1 fry onions, carrot and celery in a little oil or spray till softened and colouring.
- 2 add lamb and fry till browned.
- 3 add tomatoes and italian seasoning.
- 4 add stock cube and add enough water to cover contents.
- 5 bring to boil, cover, turn down heat and simmer on stove till tender or place in oven and simmer till tender.
- 6 serve with rice or polenta or over baked potato.
