Lamb Rib Chops-electric Smoker

Total Time: 6 hrs Preparation Time: 2 hrs Cook Time: 4 hrs

Ingredients

  • Servings: 4
  • 1/3 cup sea salt
  • 1 quart apple juice
  • 1 quart water
  • 1 tablespoon black peppercorns
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
  • 1 lime
  • 1 1/2 lbs lamb rib chops, with bone
  • 3 cups apple wood chips, soaked

Recipe

  • 1 brining=put all ingredients into a glass jar, dissolve salt thoroughly.
  • 2 add lamb & place jar in refrigerator for soak 4 hours.
  • 3 remove lamb and rinse thoroughly ( 5+ times).
  • 4 preheat smoker to 220f, place full water pan and pre-soaked chips into smoker.
  • 5 smoke 2 1/2 hours until internal temperature of 165°f.
  • 6 remove and let rest 10 minutes.
