Lamb Tenderloin Parmesan

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 12 ounces lamb tenderloin, cut in 1/2 inch thick slices
  • 2 egg whites
  • 1 tablespoon water
  • 1/4 cup plain breadcrumbs (progresso)
  • 1/4 cup fresh grated parmesan cheese
  • 3 tablespoons flour
  • 1 tablespoon salt
  • 2 tablespoons olive oil

Recipe

  • 1 put lamb slices between waxed paper or plastic wrap.
  • 2 with a mallet, pound to about 1/2" thick.
  • 3 in a bowl, mix egg whites with water.
  • 4 in another bowl, mix parmesan cheese and breadcrumbs.
  • 5 put flour in a third bowl.
  • 6 season lamb lightly with salt.
  • 7 dip lamb rounds in flour, then in egg mixture, then in cheese/breadcrumb mixture.
  • 8 heat oil in non-stick skillet.
  • 9 cook slices until golden brown and done-- about 2 minutes per side.
