Lamb Tenderloin Parmigiana

Ingredients
- Servings: 4
- 1 lamb tenderloin
- 1 egg
- 1/2 teaspoon season salt
- 1/8 teaspoon pepper
- 1/2 cup breadcrumbs
- 2 tablespoons oil
- 1 (15 1/2 ounce) jar spaghetti sauce
- 2 slices mozzarella cheese
- 1/4 cup parmesan cheese
Recipe
- 1 beat egg, add salt & pepper.
- 2 dip tenderloin into egg mixture, then in bread crumbs.
- 3 brown in hot oil on all sides. pour off grease.
- 4 add spaghetti sauce. cover & cook in 350 degree oven for 30-35 minutes.
- 5 remove cover, top with cheeses. cook an additional 10 minutes, uncovered.
- 6 serve with cous-cous topped with spaghetti sauce.
