Parmesan Ranch Meatloaf #rsc

Ingredients

  • Servings: 6
  • 2/3 cup hidden valley® original ranch® dressing
  • 1 cup parmesan cheese, grated (reserve 1/3 cup)
  • 1 tablespoon worcestershire sauce
  • 2 eggs, beaten
  • 1 1/2 cups breadcrumbs
  • 1 lb ground lamb
  • 1 lb ground sirloin
  • 2 medium shallots, finely chopped

Recipe

  • 1 heat oven to 375 degrees f.
  • 2 line a 13 x 9 x 2 inch pan with non-stick aluminum foil.
  • 3 in a large mixing bowl, combine dressing, 2/3 cup parmesan, worcestershire, eggs and breadcrumbs and stir well.
  • 4 crumble the ground lamb and ground sirloin into the breadcrumb mixture.
  • 5 add the chopped shallots.
  • 6 gently mix by hand until thoroughly combined, being careful to not overwork it.
  • 7 shape mixture into a loaf and place in prepared pan.
  • 8 bake uncovered 1 hour or until meat is done medium well.
  • 9 remove from oven, sprinkle reserved parmesan over the top and allow loaf to rest 5 minutes before serving.
