Pineapple Lamb Chops (grilled)

Ingredients

- 1 cup pineapple juice
- 1/2 teaspoon ground cumin
- 1 tablespoon fresh cilantro, chopped
- 4 lamb chops, bone-in, about 2 1/2 lbs
- 1 small pineapple, trimmed, cut into 12 slices
- salt
- pepper
Recipe
- 1 heat grill or broiler.
- 2 in saucepot over high heat, bring pineapple juice and cumin to a boil.
- 3 reduce heat to medium-high and cook 5 minutes or more, until mixture is reduced to 1/2 cup.
- 4 stir in cilantro.
- 5 meanwhile, season lamb chops with salt and pepper to taste, if desired.
- 6 grill or broil lamb for 15 minutes, or until instant-read thermometer reads 160 degrees f., turning once.
- 7 place pineapple on grill.
- 8 brush lamb chops and pineapple with glaze, turning once.
- 9 transfer to a serving plate.
