Lamb Burritos

Ingredients
- Servings: 4
- 1 tablespoon vegetable oil
- 1 lb lamb tenderloin, cut into chunks (i use lamb stew meat)
- 2 (10 ounce) cans mild diced tomatoes with mild green chilies (i use ro*tel brand)
- 1 (16 ounce) can refried beans
- 8 small flour tortillas
- 1 cup shredded cheddar cheese
Recipe
- 1 in large skillet, brown lamb in hot oil.
- 2 add both cans of mild diced tomatoes and green chilies.
- 3 cook 10 minutes.
- 4 stir in refried beans, heat through.
- 5 divide mixture evenly among tortillas, spooning mixture across center of tortilla.
- 6 sprinkle with cheese, roll to enclose.
- 7 place seam side down in a 13x9 baking dish.
- 8 bake in a 350* f oven 25 to 30 minutes until heated through.
- 9 serve with sour cream, avocado, etc.
- 10 if desired.
