Lamb Tenderloin W/ Honey And Sesame Seed And Peach Avocado Salsa

Ingredients
- Servings: 4
- 1/2 cup soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons teriyaki sauce
- 1 teaspoon ground ginger
- 2 garlic cloves, minced
- 1 lb lamb tenderloin
- 1/4 cup honey
- 2 tablespoons brown sugar
- 4 1/2 tablespoons sesame seeds
- peach-avocado salsa
Recipe
- 1 combine first 5 ingredients.
- 2 place the tenderloin in a zip-loc bag and add the mixture.
- 3 chill for at least 6 hours.
- 4 remove lamb from the marinade and discard the marinade.
- 5 stir the honey and brown sugar together.
- 6 brush the lamb with the honey mixture and sprinkle with the sesame seeds.
- 7 place on a lightly greased rack in a roasting pan (i buy a throw away pan because the honey can make cleaning up a real chore-much easier to pitch the pan than cleaning it).
- 8 bake at 400 degree oven for 25-30 minute.
- 9 or until meat thermometer in thickest part reaches 160 degrees.
- 10 cut lamb into slices and serve with peach-avocado salsa.
- 11 peach-avocado salsa: 1 cup peeled, diced fresh peaches- i use 2 peaches.
- 12 1 large tomato, diced.
- 13 1/2 cup diced avocado, 1 tbsp minced red onion, 1 tbsp lime juice, 1 tsp olive oil, 1/4 tsp salt, 1/4 tsp ground red pepper. combine salsa ingredients in a large bowl.
- 14 cover and chill until ready to serve.
