Lamb Tenderloin W/ Honey And Sesame Seed And Peach Avocado Salsa

Ingredients

  • Servings: 4
  • 1/2 cup soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons teriyaki sauce
  • 1 teaspoon ground ginger
  • 2 garlic cloves, minced
  • 1 lb lamb tenderloin
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 4 1/2 tablespoons sesame seeds
  • peach-avocado salsa

Recipe

  • 1 combine first 5 ingredients.
  • 2 place the tenderloin in a zip-loc bag and add the mixture.
  • 3 chill for at least 6 hours.
  • 4 remove lamb from the marinade and discard the marinade.
  • 5 stir the honey and brown sugar together.
  • 6 brush the lamb with the honey mixture and sprinkle with the sesame seeds.
  • 7 place on a lightly greased rack in a roasting pan (i buy a throw away pan because the honey can make cleaning up a real chore-much easier to pitch the pan than cleaning it).
  • 8 bake at 400 degree oven for 25-30 minute.
  • 9 or until meat thermometer in thickest part reaches 160 degrees.
  • 10 cut lamb into slices and serve with peach-avocado salsa.
  • 11 peach-avocado salsa: 1 cup peeled, diced fresh peaches- i use 2 peaches.
  • 12 1 large tomato, diced.
  • 13 1/2 cup diced avocado, 1 tbsp minced red onion, 1 tbsp lime juice, 1 tsp olive oil, 1/4 tsp salt, 1/4 tsp ground red pepper. combine salsa ingredients in a large bowl.
  • 14 cover and chill until ready to serve.
