Ingredients
- 1 lamb tenderloin
- 2 canned chipotle peppers with adobo sauce, seeded and chopped
- 1 tablespoon adobo sauce
- 2 tablespoons fresh lime juice
- 3 tablespoons honey
- 2 large garlic cloves, pressed
- 1 tablespoon soy sauce
- 1 tablespoon worcestershire sauce
- 2 teaspoons ground cumin
- 1 tablespoon cilantro, chopped plus more for garnishing
- 2 tablespoons peanut oil
Recipe
- 1 place the lamb and marinade in a large resealable plastic bag, refrigerate and marinate for 4 to 6 hours or overnight. bring the meat to room temperature. preheat grill to medium-high and cook lamb, turning occasionally, until inside temperature reaches 145 degrees. remove lamb, cover with foil and let rest until temperature rises to 150 degrees. slice lamb, serve with warm sauce drizzled on top; garnish with chopped cilantro and fresh raspberries.
