Lamb Oreganata

Ingredients

- 4 (4 ounce) boneless lamb loin chops
- 1 tablespoon flour
- salt and pepper
- 1 tablespoon olive oil, divided
- 3 tablespoons dry wine or 3 tablespoons low-fat chicken broth or 3 tablespoons low-sodium low-fat chicken broth
- 4 garlic cloves, minced
- 2 tablespoons fresh oregano, chopped
- 1/4 teaspoon dried thyme
Recipe
- 1 coat the lamb chops with flour that has been mixed with salt and pepper.
- 2 heat half of the olive oil in a large nonstick pan over medium-high heat.
- 3 add the lamb chops and saute for 3-4 minutes per side.
- 4 remove from the skillet.
- 5 add the wine or broth and boil for 1 minute.
- 6 add the remaining olive oil and the garlic and saute for 2 minutes.
- 7 add oregano and thyme and cook for 1 minute.
- 8 put the lamb chops back in the pan and coat them with the garlic and oregano.
