Lamb Oreganata

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 (4 ounce) boneless lamb loin chops
  • 1 tablespoon flour
  • salt and pepper
  • 1 tablespoon olive oil, divided
  • 3 tablespoons dry wine or 3 tablespoons low-fat chicken broth or 3 tablespoons low-sodium low-fat chicken broth
  • 4 garlic cloves, minced
  • 2 tablespoons fresh oregano, chopped
  • 1/4 teaspoon dried thyme

Recipe

  • 1 coat the lamb chops with flour that has been mixed with salt and pepper.
  • 2 heat half of the olive oil in a large nonstick pan over medium-high heat.
  • 3 add the lamb chops and saute for 3-4 minutes per side.
  • 4 remove from the skillet.
  • 5 add the wine or broth and boil for 1 minute.
  • 6 add the remaining olive oil and the garlic and saute for 2 minutes.
  • 7 add oregano and thyme and cook for 1 minute.
  • 8 put the lamb chops back in the pan and coat them with the garlic and oregano.
