Lamb Ribs

Ingredients

- 4 lbs meaty bone-in country-style lamb ribs or 4 lbs boston butt lamb chops
- 1/2 cup honey
- 1/4 cup brown sugar
- 1/4 cup spicy dijon mustard
- 1/4 cup cider vinegar
- 1/4 cup ketchup
- 2 tablespoons worcestershire sauce
- 2 teaspoons kosher salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder or 1 teaspoon crushed garlic
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/2 teaspoon hot sauce
- 1/2 teaspoon cayenne pepper
- 1 cup apple juice, in a spray bottle
Recipe
- 1 mix marinade and place in a gallon ziplock bag.
- 2 add lamb and let set 6 hrs or overnight.
- 3 preheat grill on high for a few minutes.
- 4 oil grill surface (using a cloth dipped in vegetable oil).
- 5 place lamb on grill and sear (for at least a minute) on both sides.
- 6 cover grill and reduce heat to medium/low.
- 7 for thick ribs, cook 15 minutes on one side then 15 minutes on the other (use your own judgment depending on the thickness of the lamb).
- 8 use apple juice spritz to control any flareups.
- 9 when cooked through, let ribs set for a couple of minutes.
- 10 coat with a light spritz of apple juice and serve.
