Lamb Ribs

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 4 lbs meaty bone-in country-style lamb ribs or 4 lbs boston butt lamb chops
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup spicy dijon mustard
  • 1/4 cup cider vinegar
  • 1/4 cup ketchup
  • 2 tablespoons worcestershire sauce
  • 2 teaspoons kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder or 1 teaspoon crushed garlic
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon hot sauce
  • 1/2 teaspoon cayenne pepper
  • 1 cup apple juice, in a spray bottle

Recipe

  • 1 mix marinade and place in a gallon ziplock bag.
  • 2 add lamb and let set 6 hrs or overnight.
  • 3 preheat grill on high for a few minutes.
  • 4 oil grill surface (using a cloth dipped in vegetable oil).
  • 5 place lamb on grill and sear (for at least a minute) on both sides.
  • 6 cover grill and reduce heat to medium/low.
  • 7 for thick ribs, cook 15 minutes on one side then 15 minutes on the other (use your own judgment depending on the thickness of the lamb).
  • 8 use apple juice spritz to control any flareups.
  • 9 when cooked through, let ribs set for a couple of minutes.
  • 10 coat with a light spritz of apple juice and serve.
