Pan-seared Cheddar Bbq Lamb Chops

Ingredients

- 4 boneless lamb loin chops
- salt
- pepper
- 2 teaspoons butter
- 2 garlic cloves, minced
- 1 small onion, chopped
- 1/2 cup barbecue sauce
- 1/4 cup water
- 2 ounces canadian cheddar cheese, swiss or 2 ounces havarti cheese, cut into thin slices
Recipe
- 1 preheat broiler.
- 2 sprinkle boiler with salt and pepper. in a large ovenproof skillet, melt butter over medium-high heat. brown lamb chops, turning once, for about 1 minute per side; transfer to a plate. add garlic and onion to pan and sauté for about 2 minutes or until starting to brown. add bbq sauce and water and bring to a boil, scraping up bits stuck to pan.
- 3 return lamb chops to pan and turn to coat in sauce; reduce heat and simmer for 3-5 minutes or until just a hint of pink remains in lamb. place cheese slices evenly on top of each lamb chop. broil for about 2 minutes or until cheese is bubbling.
