Rack Of Lamb With Cilantro- Mint Sauce

Total Time: 42 mins Preparation Time: 30 mins Cook Time: 12 mins

Ingredients

  • Servings: 6
  • 1/4 cup fresh squeezed lime juice
  • 2 green onions
  • 1 serrano chili, seedless
  • 1 small garlic clove
  • 1 teaspoon fresh ginger
  • 4 tablespoons honey
  • 1 cup tightly packed mint leaf
  • 1 cup tightly packed cilantro leaf
  • 2 racks of lamb
  • 1/2 teaspoon salt
  • 1/4 tablespoon pepper

Recipe

  • 1 puree all ingredients except lamb in a blender. let sit covered during cooking.
  • 2 preheat oven to 500* f.
  • 3 rub lamb with salt and pepper to personal taste.
  • 4 place baking pan in hot oven for 10 minutes, then place lamb fat side down on the pan for approximately 12 minutes for rare.
  • 5 spoon generous amount of cilantro mint sauce on plate, top with 3-4 bones of lamb.
