Rack Of Lamb With Cilantro- Mint Sauce

Ingredients
- Servings: 6
- 1/4 cup fresh squeezed lime juice
- 2 green onions
- 1 serrano chili, seedless
- 1 small garlic clove
- 1 teaspoon fresh ginger
- 4 tablespoons honey
- 1 cup tightly packed mint leaf
- 1 cup tightly packed cilantro leaf
- 2 racks of lamb
- 1/2 teaspoon salt
- 1/4 tablespoon pepper
Recipe
- 1 puree all ingredients except lamb in a blender. let sit covered during cooking.
- 2 preheat oven to 500* f.
- 3 rub lamb with salt and pepper to personal taste.
- 4 place baking pan in hot oven for 10 minutes, then place lamb fat side down on the pan for approximately 12 minutes for rare.
- 5 spoon generous amount of cilantro mint sauce on plate, top with 3-4 bones of lamb.
