Smoked Lamb Butt

Ingredients
- 6 -8 lbs lamb shoulder
- 3/4 cup firmly packed dark brown sugar
- 3/4 cup sugar
- 1/2 cup paprika
- 1/4 cup morton's kosher salt
- 1/4 cup garlic powder
- 2 tablespoons ground black pepper
- 2 tablespoons ground ginger powder
- 2 tablespoons onion powder
Recipe
- 1 rinse lamb shoulder in cool water.
- 2 preheat grill to 225.
- 3 mix ingredients in to a small bowl.
- 4 rub ingredients onto the lamb shoulder.
- 5 tie the shoulder up with string (optional).
- 6 cook the shoulder at 225 for 12-16 hours.
