Parmesan Lamb Tenderloin

Ingredients

- 1 lb lean lamb tenderloin
- 3 tablespoons seasoned bread crumbs
- 1 tablespoon parmesan cheese, grated
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 teaspoons vegetable oil
- 1 small onion, chopped
- 1 garlic clove, minced
Recipe
- 1 cut tenderloin into 1 inch thick pieces.
- 2 place each piece on surface and flatten with heel of hand to ½ inch thickness.
- 3 combine bread crumbs, cheese, spices. dredge lamb to coat.
- 4 heat oil in large skillet. add lamb and distribute onions and garlic around meat.
