Parmesan Lamb Tenderloin

Ingredients

  • Servings: 4
  • 1 lb lean lamb tenderloin
  • 3 tablespoons seasoned bread crumbs
  • 1 tablespoon parmesan cheese, grated
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 teaspoons vegetable oil
  • 1 small onion, chopped
  • 1 garlic clove, minced

Recipe

  • 1 cut tenderloin into 1 inch thick pieces.
  • 2 place each piece on surface and flatten with heel of hand to ½ inch thickness.
  • 3 combine bread crumbs, cheese, spices. dredge lamb to coat.
  • 4 heat oil in large skillet. add lamb and distribute onions and garlic around meat.
  • 5 cook slowly 5 minutes, turn, cook 5 minute more.
