Black Beans And Lamb Chops

Ingredients

  • Servings: 4
  • 4 bone-in lamb chops
  • ground black pepper to taste
  • 1 tablespoon olive oil
  • 1 (15 ounce) can black beans, with liquid
  • 1 cup salsa
  • 1 tablespoon chopped fresh cilantro

Recipe

    Preparation Time: 5 mins Cook Time: 25 mins Ready Time: 30 mins

  • season lamb chops with pepper.
  • heat oil in a large skillet over medium-high heat. cook lamb chops in hot oil until browned, 3 to 5 minutes per side.
  • pour beans and salsa over lamb chops and season with cilantro. bring to a boil, reduce heat to medium-low, cover the skillet, and simmer until lamb chops are cooked no longer pink in the center, 20 to 35 minutes. an instant-read thermometer inserted into the center should read 145 degrees f (63 degrees c).
