Pasta With Sausage And Fava Beans

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 2 tablespoons olive oil
  • 1/2 cup onion, minced
  • 2 garlic cloves, coarsely chopped
  • 1/8 teaspoon crushed red pepper flakes
  • 1/2 lb italian sausage, casings removed
  • 1/4 cup dry wine
  • 1 3/4 cups diced tomatoes (plum are meatiest)
  • 1 cup fava beans, shelled (about 1 lb)
  • kosher salt
  • fresh ground black pepper
  • 3/4 lb fresh pasta (sheets cut as desired) or 34 lbs fettuccine pasta
  • 2 tablespoons parmesan cheese, grated

Recipe

  • 1 in a large saucepan, heat oil over medium heat; add onion, garlic, and pepper flakes and cook until onion is translucent, about 6 minutes.
  • 2 add sausage and brown, while breaking up with a fork or wooden spoon, about 3 minutes.
  • 3 add wine and simmer 1 minute; add tomatoes and fava beans.
