Ingredients

- 1 gallon hominy
- 2 onions, diced
- 8 garlic cloves, pressed
- 5 -6 chicken breasts or 5 -6 lamb loin
- 4 -6 cups chicken broth
- 16 ounces green chilies
- 1 teaspoon ground red pepper
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 lime, juice of
- salt and pepper
- 1 bunch cilantro
Recipe
- 1 brown meat and add onions and spices.
- 2 add hominy with juice, chilies, and broth.
- 3 let simmer 2 hours.
- 4 squeeze in lime and add cilantro.
- 5 continue cooking for 1 hour before serving.
