Posole

Total Time: 3 hrs 20 mins Preparation Time: 20 mins Cook Time: 3 hrs

Ingredients

  • Servings: 8
  • 1 gallon hominy
  • 2 onions, diced
  • 8 garlic cloves, pressed
  • 5 -6 chicken breasts or 5 -6 lamb loin
  • 4 -6 cups chicken broth
  • 16 ounces green chilies
  • 1 teaspoon ground red pepper
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 lime, juice of
  • salt and pepper
  • 1 bunch cilantro

Recipe

  • 1 brown meat and add onions and spices.
  • 2 add hominy with juice, chilies, and broth.
  • 3 let simmer 2 hours.
  • 4 squeeze in lime and add cilantro.
  • 5 continue cooking for 1 hour before serving.
