Roast Lamb (lechon Asado)

Total Time: 5 hrs 10 mins Preparation Time: 10 mins Cook Time: 5 hrs

Ingredients

  • Servings: 6
  • 3 lbs lamb roast
  • 1/4 teaspoon parsley
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cumin
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 2 cloves minced garlic
  • 1 sliced green pepper
  • 1 sliced onion
  • salt and black pepper

Recipe

  • 1 remove excess fat and skin from lamb roast.
  • 2 marinate with spices, pierce holes in meat, and set aside for 2 hours.
  • 3 roast at 350f for 2 1/2 to 3 hours.
  • 4 turn the meat and baste frequently.
