Portuguese Lamb Tenderloin

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 lb lamb tenderloin, trimmed
  • 2 tablespoons flour
  • salt
  • pepper
  • paprika
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1/2 lb mushroom, sliced
  • 2/3 cup dry wine
  • 1/4 teaspoon rosemary
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 season flour with salt, pepper and paprika.
  • 2 roll tenderloin in seasoned flour.
  • 3 saute lamb in butter until golden brown.
  • 4 add sliced onions and mushrooms.
  • 5 saute for a minute or two.
  • 6 add wine and rosemary.
  • 7 cover and cook over low heat for 45 to 60 minutes, or until done.
  • 8 add lemon juice and parsley just before serving.
