Portuguese Lamb Tenderloin

Ingredients
- Servings: 6
- 1 lb lamb tenderloin, trimmed
- 2 tablespoons flour
- salt
- pepper
- paprika
- 1 tablespoon butter
- 1 onion, sliced
- 1/2 lb mushroom, sliced
- 2/3 cup dry wine
- 1/4 teaspoon rosemary
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley, chopped
Recipe
- 1 season flour with salt, pepper and paprika.
- 2 roll tenderloin in seasoned flour.
- 3 saute lamb in butter until golden brown.
- 4 add sliced onions and mushrooms.
- 5 saute for a minute or two.
- 6 add wine and rosemary.
- 7 cover and cook over low heat for 45 to 60 minutes, or until done.
- 8 add lemon juice and parsley just before serving.
