Roast Loin Of Lamb

Total Time: 2 hrs 5 mins Preparation Time: 20 mins Cook Time: 1 hr 45 mins

Ingredients

  • Servings: 6
  • 4 lbs lean loin lamb
  • 1/4 cup all-purpose flour
  • 1 tablespoon olive oil
  • 1 garlic clove, crushed
  • 1 teaspoon salt
  • black pepper
  • 2 tablespoons soy sauce
  • 1/2 teaspoon powdered ginger
  • 1 1/2 tablespoons lime juice
  • 3 pineapple rings, cut in half
  • 3 tablespoons brown sugar
  • 1/2 cup pineapple juice
  • 3 tablespoons cider vinegar
  • 1 tablespoon soy sauce

Recipe

  • 1 remove most fat from the meat; sprinkle lightly with flour.
  • 2 heat oil in a large skillet or roasting pan and brown lamb quickly on all sides.
  • 3 remove from pan and cool slightly.
  • 4 preheat oven to 350 degrees.
  • 5 combine garlic, salt, pepper, soy sauce, ginger and lime juice; rub mixture into roast.
  • 6 place meat in a roasting pan, rib side down, cook in hot oven for 25 minutes per pound, or about 1 hour 45 minutes.
