Portuguese Lamb Loin

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 lb lamb tenderloin
  • salt & freshly ground black pepper
  • 1 teaspoon paprika
  • 1 tablespoon butter
  • 1/4 cup onion, sliced
  • 1/2 cup mushroom, sliced
  • 1/3 cup dry wine
  • 1/4 teaspoon dried rosemary
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 season tenderloin with salt, pepper and paprika. saute lamb in butter until golden brown. add sliced onions and mushrooms. saute for a minute or two. add wine and rosemary. cover and cook over low heat for 45 to 60 minutes, or until done. add lemon juice and parsley just before serving.
