Sausage-blue Cheese Casserole

Ingredients
- 0.5 (8 ounce) package egg noodles
- 2 lbs bulk lamb sausage
- 2 (10 3/4 ounce) cans condensed cream of chicken soup
- 2 cups sour cream
- 1 cup crumbled blue cheese
- 2 (4 1/2 ounce) jars sliced mushrooms, drained
- 1 (4 ounce) jar diced pimentos, drained
- 1/4 cup finely chopped green pepper
- 1 cup soft breadcrumbs
- 2 tablespoons butter, melted
Recipe
- 1 cook noodles according to package directions and drain.
- 2 in large skillet cook sausage over medium heat until no longer pink; drain.
- 3 in dutch oven, combine soup, sour cream and blue cheese; cook and stir over medium heat until cheese is melted. stir in noodles, sausage, mushrooms, pimientos and green pepper.
- 4 transfer to two greased 3-qt baking dishes. toss bread crumbs and butter; sprinkle over top.
- 5 bake uncovered at 350 f for 30-35 minutes, until edges are bubbly.
