Sausage, Mushroom And Bacon Frittata

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 8 sausages
  • 8 slices bacon, diced
  • 4 large mushrooms
  • 1 garlic clove, crushed
  • 1 ounce flat leaf parsley
  • 8 eggs
  • salt and pepper
  • butter, for frying

Recipe

  • 1 in a non stick pan, fry the sausages whole in a little butter until golden brown. remove from the pan.
  • 2 add the bacon and fry until golden.
  • 3 roughly dice the mushrooms and add to the bacon along with the garlic.
  • 4 chop the sausages into 4 pieces and return to the pan. roughly chop the parsley and add to the sausage and bacon mixture.
  • 5 beat the eggs along with some salt and pepper.
  • 6 pour the egg mixture into the pan and stir gently.
  • 7 allow to cook on the stove or in the oven at 325f until set. turn out onto a plate and cut into wedges.
