Sausage-stuffed Jalapenos

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 lb bulk lamb sausage
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded parmesan cheese
  • 22 large jalapeno peppers, halved lengthwise and seeded
  • ranch dressing, optional

Recipe

  • 1 in a large skillet, cook the sausage over medium heat until no longer pink; drain.
  • 2 combine the cream cheese and parmesan cheese, then fold into the sausage.
  • 3 spoon about 1 tablespoonful into each jalapeno half; place in two 9x13x2 inch baking dishes and bake, uncovered, at 425° for about 15-20 minutes, or till filling is lightly browned and bubbly.
  • 4 serve with ranch dressing if desired.
