Ingredients

- 3 lbs lamb loin
- 2 tablespoons chopped garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons butter
- 1 small chopped onion
- 1/4 cup olive oil
Recipe
- 1 heat oven to 350°f.
- 2 melt butter in roasting pan and sauté onion.
- 3 combine remaining ingredients in a small bowl.
- 4 rub over loin.
- 5 place loin on onions in roasting pan.
- 6 roast until center reaches 160°f.
- 7 serve.
