Seasoned Thyme Lamb Roast

Total Time: 2 hrs 45 mins Preparation Time: 15 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 10
  • 3 lbs lamb loin roast
  • 2 onions, sliced
  • 3 tablespoons vegetable oil
  • 1/2 cup barbecue sauce
  • 1/4 cup apple juice
  • 2 tablespoons dried thyme leaves
  • 6 apples, sliced
  • 1/2 cup dried pitted prunes

Recipe

  • 1 preheat the oven to 350 degrees fahrenheit.
  • 2 brown the lamb roast and onions in hot oil in a large ovenproof pot on medium-high heat for 3 minutes, turning occasionally.
  • 3 combine the barbecue sauce, apple juice and thyme.
  • 4 pour sauce mixture over the lamb and onions.
  • 5 cover with an ovenproof lid; simmer another 10 minutes before placing the pot in the oven.
  • 6 bake for 2 hours.
  • 7 add apples and prunes; bake an additional 30 minutes or until the lamb is cooked through and the apples are tender.
