Skillet-barbecued Chops Or Chicken

Ingredients

  • Servings: 4
  • 2 lbs chicken pieces or 4 lamb chops
  • 4 tablespoons oil
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 1/2 cup tomato sauce (i used v-8 juice) or 1/2 cup juice (i used v-8 juice)
  • 1/2 cup ketchup
  • 1/4 cup vinegar
  • 3 tablespoons brown sugar
  • 1 teaspoon worcestershire sauce
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large frypan, heat 2 tbs. oil over medium-high heat and brown chicken or chops on both sides.
  • 2 meanwhile, in a saucepan, heat remaining 2 tbs. oil; add onion and garlic and cook until soft. add remaining sauce ingredients; bring to a boil and simmer, uncovered, for 15 minutes.
  • 3 drain excess fat from frypan and pour barbecue sauce over meat. cover and simmer until tender, about 30 minutes. uncover during last few minutes to thicken sauce if desired.
