Skillet Lamb Chops Florentine

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 6 (1/4 lb) boneless lamb chops, 3/4 in thick
  • 1 medium onion, sliced thin
  • 1 (26 ounce) jar marinara sauce, italian style
  • 1 (10 ounce) package frozen leaf spinach, thawed and well drained
  • 1 cup mozzarella cheese, shredded

Recipe

  • 1 heat 1 tbsp of olive oil in a large skillet over medium-high heat.
  • 2 add the lamb chops and cook until browned on both side, then remove and set aside.
  • 3 reduce the heat to medium and add the remaining oil.
  • 4 add the onion and cook until tender.
  • 5 stir in the pasta sauce and spinach and heat to a boil.
  • 6 return the lamb chops to the skillet, reduce heat to low, cover, and cook until lamb chops are done.
  • 7 sprinkle with cheese.
