Skillet Lamb Chops Florentine

Ingredients
- Servings: 6
- 2 tablespoons olive oil
- 6 (1/4 lb) boneless lamb chops, 3/4 in thick
- 1 medium onion, sliced thin
- 1 (26 ounce) jar marinara sauce, italian style
- 1 (10 ounce) package frozen leaf spinach, thawed and well drained
- 1 cup mozzarella cheese, shredded
Recipe
- 1 heat 1 tbsp of olive oil in a large skillet over medium-high heat.
- 2 add the lamb chops and cook until browned on both side, then remove and set aside.
- 3 reduce the heat to medium and add the remaining oil.
- 4 add the onion and cook until tender.
- 5 stir in the pasta sauce and spinach and heat to a boil.
- 6 return the lamb chops to the skillet, reduce heat to low, cover, and cook until lamb chops are done.
- 7 sprinkle with cheese.
