Slow Cooked Lamb Ala Michael Chiarello

Total Time: 8 hrs 10 mins Preparation Time: 10 mins Cook Time: 8 hrs

Ingredients

  • Servings: 12
  • 2 cups roasted minced garlic
  • 5 tablespoons salt
  • 1/4 cup coriander seed, ground and toasted
  • 2 tablespoons mustard powder
  • 4 tablespoons dried chipotle peppers, ground
  • 2 tablespoons dried thyme
  • 5 tablespoons dried rosemary, finely chopped
  • 5 tablespoons lemon zest
  • 2 1/2 teaspoons black pepper
  • 1 (6 lb) boneless lamb shoulder (not tied) or 1 (6 lb) lamb butt (not tied)

Recipe

  • 1 preheat oven to 275 degrees f.
  • 2 combine first 9 ingredients in a food processor.
  • 3 can also be mixed by hand in a bowl, but make sure to combine well.
  • 4 if necessary, trim fat from top of lamb, leaving a 1/8-inch thick layer of fat.
  • 5 spread roasted garlic rub all over lamb and inside any cavities, concentrating on boned side.
  • 6 put lamb, fat side up, in a roasting pan and roast in middle of oven 6 to 8 hours.
  • 7 transfer roast to cutting board and let stand 15 minutes. pull shreds apart with tongs into chunks.
  • 8 serve.
