Slow Cooker Black Bean Soup (crock Pot)

Total Time: 4 hrs 35 mins Preparation Time: 5 mins Cook Time: 4 hrs 30 mins

Ingredients

  • Servings: 8
  • 1 lb dried black beans
  • 1/2 lb diced ham
  • 5 cups chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 3/4 teaspoon black pepper
  • 1 teaspoon cornstarch

Recipe

  • 1 soak beans overnight.
  • 2 drain and rinse.
  • 3 place in a pan, cover with water, and simmer on low for an hour.
  • 4 drain beans.
  • 5 place all ingredients except cornstarch in the crock pot.
  • 6 cook on high for 4 hours.
  • 7 use a slotted spoon to remove about 1 cup of cooked beans and ham.
  • 8 place them in a blender with a little bit of the broth and puree.
  • 9 return to crock pot.
  • 10 combine cornstarch with cold water in a bowl and mix.
  • 11 add to crock pot and mix.
  • 12 cook for an another 30 minutes or until broth thickens.
