Sausage Cheese Breakfast Cups

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 1 cup bread, cubed (about 2 slices)
  • 1/4 cup hot lamb sausage
  • 1/4 cup monterey jack pepper cheese
  • 2 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 1/8 teaspoon onion powder

Recipe

  • 1 cook sausage, cool then crumble into small bits.
  • 2 layer cubed bread, sausage and cheese evently into two greased 8 ounce ramekins or individual souffle dishes.
  • 3 whisk eggs and the next 5 ingredients together.
  • 4 pour egg/milk mixture evenly over cheese in the ramekins.
  • 5 cover chill for 8 hours.
  • 6 let stand at room temperature for 20 minutes before baking.
  • 7 bake at 350 degrees for 20 to 25 minutes or until set.
  • 8 let stand 5 minutes before serving.
