Skillet Lamb Chops

Ingredients

- 2 lamb chops
- 1 tablespoon vegetable oil
- 1/2 medium onion, chopped
- 1 cup chicken broth
- 3 tablespoons grape jelly
- 1 tablespoon ground ginger
- 4 1/2 teaspoons cornstarch
- 3 tablespoons cold water
Recipe
- 1 brown lamb chops over medium heat. drain oil.
- 2 add onion; cook until tender.
- 3 pour broth around chops and bring to a boil.
- 4 reduce heat; cover and simmer 12-16 minutes or until the meat is tender.
- 5 remove lamb chops and keep warm.
- 6 stir jelly and ginger into broth.
- 7 combine cornstarch and cold water until smooth; add to broth.
- 8 bring to a boil; cook and stir for 2 minutes.
- 9 serve over lamb chops and rice.
