Lamb With Orange-glazed Onions

Ingredients

  • Servings: 4
  • 4 boneless lamb loin chops
  • 1 tablespoon oil
  • 1/2 cup orange marmalade
  • 2 tablespoons chili sauce
  • 1 medium onion, sliced into rings

Recipe

  • 1 place 1 lamb chop between 2 pieces or plastic wrap or waxed paper.
  • 2 working from center, gently pound lamb with flat side of meat mallet until about 1/4-inch thick; remove wrap.
  • 3 repeat with remaining lamb chops.
  • 4 heat oil in large skillet over medium-high heat until hot.
  • 5 add lamb chops; cook 3 to 5 minutes or until brown, turning once.
  • 6 remove lamb chops from skillet; discard drippings.
  • 7 reduce heat to low.
  • 8 add marmalade, chili sauce and onion to skillet.
  • 9 cook and stir 5 minutes or until onion is tender.
  • 10 add lamb chops; cook 3 to 4 minutes or until tender and no longer pink.
