Lamb With Orange-glazed Onions

Ingredients

- 4 boneless lamb loin chops
- 1 tablespoon oil
- 1/2 cup orange marmalade
- 2 tablespoons chili sauce
- 1 medium onion, sliced into rings
Recipe
- 1 place 1 lamb chop between 2 pieces or plastic wrap or waxed paper.
- 2 working from center, gently pound lamb with flat side of meat mallet until about 1/4-inch thick; remove wrap.
- 3 repeat with remaining lamb chops.
- 4 heat oil in large skillet over medium-high heat until hot.
- 5 add lamb chops; cook 3 to 5 minutes or until brown, turning once.
- 6 remove lamb chops from skillet; discard drippings.
- 7 reduce heat to low.
- 8 add marmalade, chili sauce and onion to skillet.
- 9 cook and stir 5 minutes or until onion is tender.
- 10 add lamb chops; cook 3 to 4 minutes or until tender and no longer pink.
